Applesauce

6 apples, peeled (optional)
1 cup water
Cinnamon, lemon juice or sugar (optional)

Quarter apples, remove the cores and cut into 1 inch pieces. You may leave the skins on for flavor and nutrients. Simmer with water until soft, about 15 to 20 minutes. Drain in a colander. Mash in bowl, leaving apples somewhat chunky or puree in a blender or food process. Serve warm or cold.

Makes 1 cup serving.
