Banana bread

1/2 cup whole wheat flour
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup granulated sugar
1/2 cup unsweetened applesauce
3 ripe bananas mashed (2 cups)
1 egg
2 egg whites
1 teaspoon vanilla
1/2 cup walnuts, chopped

Preheat oven to 350 degrees. Spray 9x5x4 inch loaf pan with nonstick cooking spray. Combine flour, spices and set aside. In a separate bowl mix applesauce, sugar, egg, egg whites, bananas and vanilla until well blended. Add flour mixture and stir to blend. Add walnuts last. Pour batter into loaf pan, bake 50-60 minutes or until knife inserted comes out clean. Cool bread before slicing.

Makes 1 loaf (16 slices).
