Black bean tacos

1 cup dried black beans or 1 cup canned black beans, no salt added
8 corn tortillas
3 tablespoons taco seasoning mix
1 cup lowfat cheddar cheese, grated
1 small white onion, diced
2 cups chopped romaine lettuce
1 cup diced tomatoes
1/2 cup salsa

Cook dried beans in crock pot or on top of stove. Add ground cumin and taco mix to beans. Simmer for 15 minutes.

Steam tortillas in steamer or in microwave oven for 1 minute. Add a tablespoon of beans, cheese, lettuce, onion, tomato, and salsa to each taco.

Makes 8 servings.
